If you’re like us, you’re always looking for ways to add a little more green to your diet. This recipe for Matcha Granola Muffins does just the trick. Matcha and spinach are added to a hearty muffin batter for a heart-healthy take on a breakfast staple.

Matcha Granola Muffins

INGREDIENTS
9 oz granola
2 large eggs
2 oz fresh baby spinach, destemmed
8 oz banana, in pieces
2 tbsp matcha powder
3 oz brown sugar
3 oz coconut oil
1 tsp vanilla
½ tsp salt
1½ tsp baking powder
1 oz hemp seeds

PREPARATION
1. Preheat oven to 350°F. Line a 12 hole muffin pan with paper muffin liners and set aside.
2. Place granola, eggs, spinach, banana, matcha powder, sugar, coconut oil, vanilla, salt, baking powder and hemp seeds into mixing bowl and mix 20 sec/speed 6.5
3. Pour batter evenly into prepared muffin pan and bake for 18 -22 minutes (350°F) or until a toothp ick inserted into center of muffins comes out clean. Serve warm or at room temperature.
